With fine gravel soils, Pessac Léognan is the star of Bordeaux’s Graves region, and home to First Growth Château Haut-Brion. Château Baret is a beautiful 18th century estate, first owned by the Lords of Baret, then the Ballande family. However, it’s under the Castéjas – owners of more than 10 other fine estates – that quality has soared. Since they took over, they’ve poured money into the vineyards and the cellar. It shows in the power and finesse of the wines. Just four of the 25 hectares is planted to white grapes, the juice of which is fermented in barrel (a fifth new) and aged for 10 months on its lees. Eight years old, it’s still vibrant with lime curd and toasty honey notes. Open early and serve with creamy sauce fish or white meats.
