The castle at the centre of the Castello di Bossi estate dates back to the 11th century, and wine has been important here since Roman times. The estate, in the southern half of the Chianti Classico zone, has had various owners. The Baccis, from Florence, bought it in 1980, invested heavily, and employed leading wine consultants Alberto Antonini and Federico Curtaz. Today Bossi Chiantis are praised by all the world’s leading wine reviewers, from Italy’s Gambero Rosso to Britain’s Decanter. For many, they are the Tuscan equivalent of Bordeaux’s Château Lafite. Girolamo is their pure Merlot – finest grapes, carefully fermented and the wine aged in new French oak casks for 12 to 14 months. Serve with rich lamb dishes or steak with mushrooms.
