Casa Silva was founded by Emilio Bouchon, who travelled from Bordeaux to Chile in 1892. Now it’s run by Mario Pablo Silva, who has taken quality to the upper echelons of Chilean wine. Not only that, the estate has also been pioneering new regions in Chile and is at the forefront of research into local viticulture. You can taste that expertise and enthusiasm here. Chardonnay brings peachy fruit, while Sémillon adds a zesty lemon tang. A small proportion of oak-aged Chardonnay rounds out the blend, bringing a richness of flavour rather than any overt spiciness. The result is a tasty white, full of tropical fruit, honeyed melon flavours and freshness. Enjoy solo or with soft white cheeses, roast chicken, panfried salmon or fennel risotto.
