The original Cabalié is red, inspired by the thought that Ancient Roman soldiers would have once drunk wines from vines planted in the very same soils of southern France that growers harvest from today. They may not have had the wherewithal to make rosés back then, but nowadays Parker-praised winemaker Hervé Sabardeil certainly does. This is the fifth release of his rosé and it’s likely to be as enthusiastically received as its sibling red. Hervé selected old-vine Grenache and Syrah to ensure lovely depth of spicy berry fruit, then harvested early to gain zippy freshness. It’s an aromatic pink with vibrant strawberry and grenadine flavours and a hint of pepper. Serve chilled with prawns, pan-seared salmon or a chicken and seafood paella.
