Made in tiny quantities, this is an fabulous Pasada release from Barbadillo. The family bodega was founded in 1821 and has won many top awards. In 2015 it was named ‘Best Winery of the Year’ by Guía Peñín and its Solear Manzanilla was awarded ‘Best Manzanilla in the World’. Seventh generation, the company is still one of the most innovative in the wine world and boasts 500 hectares of Jerez vines. Their Pastora brand was first launched in 1827 and revived in 2014. Pastora is aged for 8 years in solera, two years longer than their Solear Manzanilla. With age, the flor (a layer of yeast) thins, so the sherry benefits from gentle oxidation, only adding to the amazing panoply of flavours. Unfiltered (en rama), this sherry is one to savour.
