Verdelho makes a delicious change from Sauvignon, sharing its zip of freshness, but offering creamy, exotic fruit character, too. You'll taste that and more in this great 2016 from Chapel Hill. This historic estate was founded by Professor Tom Nelson in 1973, when he planted vines around a dilapidated stone chapel, close to the Mount Lofty Ranges. Having renovated the building, he began making wine inside. It remained in use until replaced in 1994 by a new winery. In charge today is Michael Fragos, a McLaren Vale wine evangelist of 20 years standing. Using only free run juice (before the grapes are pressed) for the purest of flavour and all lees aged, this is a bright, creamy wine with appetising freshness. Serve solo or with seared salmon.
