Offering a pure reflection of the Deutz style, this Blanc de Blancs is world-class. The Chardonnay hails from some of the Côte des Blancs’ finest vineyards, hand harvested and then pressed and vinified at Deutz’ winery in Aÿ. (And 2008 was an exceptional vintage, producing wines of supreme precision and depth.) The wine was then aged for 7 years on the lees, resulting in a fizz with gorgeous complexity. Silky and delicate, it offers quince, apricot and mirabelle plum flavours set off by candied fruits, lavender honey and a delicate thread of bubbles. A sumptuous aperitif, it also pairs beautifully with grilled seafood such as sea bass or sole, and compliments the delicate flavours of caviar, sashimi and soft white cheeses beautifully.
