Les Evocelles is a 10 hectare 'climat’ (single vineyard) of Gevrey-Chambertin. Despite being surrounded by Premier Cru vineyards, Les Evocelles missed out on that particular classification, perhaps because its high elevation has occasionally been known to affect the ripeness of grapes in cool vintages. There are no concerns along those lines in the "seriously delicious" 2016 vintage. Winemaker of the Year thrice over, Albéric Bichot hand picked the well ripened fruit and treated the wine to 20 months in oak casks, 40% of them new. Regular stirring ensures a rich, multi-layered wine of great complexity. Bottled without fining, this Gevrey has generous red fruit with subtle hints of gingerbread and delicate oak. Ideal served with light game.
