Most winemakers are daydreamers (songeurs), just hoping to make that one conversation stopping wine. This is Mark Hoddy’s version, from Le Chai. He has long been an admirer of the silky, elegant Cabernet Francs of the Loire and the richer, more textural clarets from Saint Emilion. So, when the Torquebiau family in Hérault’s renowned Canet village offered him a parcel of exceptional Cab Franc grapes, he felt it was a sign! The family’s tiny estate lies near to the Mas de Daumas Gassac property, which 30 years ago shot to stardom and proved that the Languedoc can make Cru Classé quality wines. Aged for 10 months at Le Chai in fine French oak, this is a supple, silky red with deep fruit, liquorice and spice. Serve with moussaka or white meats.
