The Jouard family have been custodians of prime Chassagne vineyards for five generations. François Jouard handles the winemaking, creating wines with the greatest respect for the celebrated Chassagne Montrachet terroir. Older brother Vincent manages the soil and tends the vines in sustainable fashion, preferring ploughing weeds to spraying. The quality of his pristine grapes is the basis of the domaine’s elegant, richly flavoured wines. Specialists in Chassagne Montrachet, the Jouards make a mere 250 cases, using only the fruit of half century old vines. Ageing the wine in one third new oak from the finest barrel makers, Chassin, Gillet and Billon, lends amazing complexity. Serve this classic Burgundy with blanquette de veau or chicken.
