Château de Puligny has really come to life since 2001, when Etienne de Montille took over winemaking. He drastically reduced yields, added a gentler touch in the cellar and let the fruit shine over the oak. He has also introduced organic and biodynamic farming. At least two thirds of the grapes for this fine Puligny Montrachet come from the Chalumeaux vineyard, declassified when the previous owner applied a forbidden top soil. Etienne has undone the damage, but it remains an unclassified Premier Cru. Added to that is fruit from two other vineyards – Levron and Baudrières Nosroy. Just 15% of the barrels were new to ensure a beautifully balanced wine that tastes way finer than its village status. Enjoy with classic chicken or seafood dishes.
