Pinot Noir is the red grape of Burgundy, a famously fussy variety, liking it neither too hot nor too cold, so winemaker Mark Hoddy sourced the fruit for this southern French red from three separate vineyards situated high in the Limoux Valley and in the hills of Carcassonne. The high altitude of the vines and the cooling influence of the Atlantic create a moderate climate with warm days and cool nights, helping to retain the bright acidity, delicacy and finesse that is the hallmark of this grape. With its soft, supple texture and intense fruit, this wine is a great match for simple roast red meats and hard farmhouse cheeses. It's delicious on its own, too, and perfect to pop open when friends drop round, served cellar cool.
