Manzanilla is the specialty of Sanlúcar de Barrameda. Sherries matured by the sea take on a salty tang that just serves to make them even more appetizing. Most manzanilla is drunk as a pale, unsweetened fino style. This one is the other end of the spectrum, aged until it developed a dark, nutty, slightly buttery character.
